The University of Gastronomic Sciences, Italy, is a very special institution. Not only is it one of the most celebrated dedicated food studies universities in the world, it is also the birthplace of Carlo Petrini's Slow Food Movement.  The Pollenzo Convergence was a two day conference organised by Dr. Nicola Perullo, with an aim to explore questions concerning the relationship between food, art and philosophy at an international convergence of chefs, philosophers, semiologists, students, artists, and researchers.

The Nordic Food Lab is a part of the 'Nordic Food Movement' and a research & development space for Noma restaurant (listed as the world's best restaurant for four years by Restaurant Magazine, the most prominent of such listings). New Nordic Food is a public-private initiative launched by the Nordic Council of Ministers with a mandate to promote Nordic food culture and it's different aspects in the region and internationally. The Nordic Food Lab is an open-source research facility that explores food science; run by Michael Bom Frøst, Associate Professor in Sensory Science at University of Copenhagen.

With a board that includes the most legendary chefs on the planet, the Basque Centre is famous for its gastronomic prestige. Additionally, San Sebastian is the city in the world that boasts the most Michelin stars. This very special place, and the food community built by its legendary inhabitants, has become a hub of scholastic multidisciplinary investigations into all matters pertaining to food.
